STYLE —

A medium to full bodied wine of immense drinkability.

VITICULTURE —

The fruit for this wine was sourced off our winery vineyard. Soil profile is brown to red loam over limestone. Yield was 2.2 tonnes/acre.

VINIFICATION —

Despite a prolonged heatwave in February, the vineyard buffered it very well and the resulting wine displays distinctive varietal character. The grapes were harvested in early April. Fermented in static red fermenters on skins through to dryness and then basket pressed – the basket pressing helps to soften the tannins and build structure on the mid palate. Matured in a selection of American and French oak hogsheads/barriques. 14.5% alc/vol

TASTING NOTES —

This Watervale Cabernet Sauvignon was sourced off our winery vineyard. Tantalising mulberry/cassis and herbaceous aromas are evident on the nose. Plump berry flavours give depth to the mid palate supported by fine tannins and subtle oak. This round and very drinkable style is a result of basket pressing, finishing with good length of flavour. Cellaring potential of 6-7 years.
