STYLE—
A full bodied yet balanced wine of immense drinkability.
VITICULTURE —
The fruit for this wine is sourced off our winery vineyard. Soil profile is brown to red loam over limestone. Yield averaged 2.5 tonnes/acre.
VINIFICATION—
Hot,dry conditions throughout vintage prompted earlier ripening and produced Cabernet styles with lifted mulberry and herbaceous components. The grapes were harvested in late March. Fermented in static red fermenters on skins through to dryness and then basket pressed. Matured in a selection of aged American oak hogsheads for 24 months. Alcohol 14%v/v.
TASTING NOTES —
Made from 100% Watervale Cabernet Sauvignon. Spice, mulberry and herbaceous aromas are evident on the nose. Robust, “sweet” berry fruits intertwine with fine tannins and well integrated charry oak. This full bodied style is a result of basket pressing, producing a balanced wine with length and depth of flavour. Cellaring potential of 5-7 years.
